Best Vegan Cheese Sauce

See how seamlessly a protein, vitamin, and veg-packed Vegan Cheese Sauce is born. I've tried many recipes, and tinkered with my own recipe endlessly, until this perfection was achieved.

You only need 12 minutes and a handful of standard ingredients to pull off the healthiest cheese sauce around. Please enjoy!

What you need:

For the Cheese Sauce:

1 C Carrots, chopped
4-5 Cauliflower Florets
1/4 C Pumpkin Seeds*
1/2 C Non-dairy Milk
1 Tsp Salt
2 Tbl Tomato Paste or 3 Tbl Marinara Sauce
2 Tbl Nutritional Yeast
Optional for added flavor: 1 Tbl Miso Paste

For the Nachos:

Tortilla Chips
Black Beans
1/2 Onion
1/2 Tsp Cumin
1/2 Tsp Chili powder
3/4 Tsp Salt
Optional: Cilantro, Corn, Jalapeno, Ole!

For the Macaroni:

Pasta Shells, or Macaroni

Optional: Garlic Roasted Broccoli

What you do:

Boil the carrots, cauliflower & pumpkin seeds for 10 minutes. In the meantime, if making nachos, set your onion to sauté and add the remaining cheese sauce ingredients to a blender.

Incorporate the boiled carrots/cauli/seeds & blend to cheesy perfection.

For the Nachos, add black beans to the onion and season with salt/cumin/chili powder.

Assemble and Devour!

*For the pumpkin seeds: I used lightly salted store bought, but extra credit for unearthing them from your household pumpkin! Just make sure to bake them and add an extra 1/2 tsp salt to make up for the difference.
