1 RUSSET POTATO CHOPPED
1/4 POUND SLICED OR CHOPPED UNREAL CORN’D BEEF
1 RED PEPPER PEPPER CHOPPED
1/2 ONION CHOPPED
2 LEAVES DINOSAUR KALE
2 TBS OILIVE OIL OPTIONAL: ZUCCHINI, MUSHROOMS, SWEET POTATOES GARNISH: PARSELEY
BOIL POTATOES until semi soft. Drain. Heat Olive oil in pan. Add potatoes and sauté 5 minutes until golden brown. Add red pepper and onions and sauté 5 more minutes. Finally add kale.
CRSIPY UNREAL CORN’D BEEF: ADD 1 TBS vegan butter to pan and heat. CHOP corned beef into 1 inch pieces. Sauté in pan, stirring occasionally until desired crispness is reached. Don’t overcook, a small amount of heat goes quite far.
